Recipe // Strawberry Summer Fool



Me and my friends often hold our own series of 'Come Dine With Me' at each others houses; its a great way to save money and spend time together! I'd definitely recommend doing it if you haven't already! I'd love to share my latest main of tandoori hake and Indian rice with you, but my dessert just looked amazing, and its so easy to make! Give it a go!

What you need
50g golden caster sugar
1 vanilla pod/vanilla essence
Lemon zest
Strawberries (about 450g)
250ml double cream
200g fromage frais
Biscuits (I use ginger snaps but shortbread is also yum)!

Method
Dissolve sugar in a bowl with 1 tablespoon of boiling water to make a syrup.

Add seeds from vanilla pod or a few drops of vanilla essence. Also add the pod and zest, but these will be coming out shortly. Leave for 15 minutes whilst the flavours infuse, and remove the pod and zest. 

Keep aside some strawberries - One for each dessert you will be making. Hull, halve, and mash the rest, leaving some chunks intact.

Stir the strawberries with the syrup to make a rough puree.

Whip the double cream and stir in the fromage frais. 

Crumble biscuits by putting them into a sealed sandwich bag and bashing with a rolling pin (the fun part).

Spoon cream mixture, strawberry puree mixture and crumbled biscuits into glasses in layers.

Decorate with saved strawberries, halved!

  3. WOW, it looks delicious! :) I'd love to do it with my girlfriends, but although we don't live far from each other, London transport is a (eghm...) bitch, so we usually go clubbing in central London (fair for everyone).

    Absolutely loving your dog in the second photo! He looks so innocent and just pleading for a walk or a scrap of food! :) X
