Its all about Pizza!



This pizza recipe is gorgeous, I wanted to share it with you as its great fun to make and tastes scrumptious! 
Incidentally, I went round my boyfriends house armed with ingredients thinking we could have a bit of fun making our own pizza from scratch, but my overworked and hungry boy actually got really stressed because he couldn't form the dough into a nice round shape, and I couldn't help but laugh at his frustration, whoops! Anyway, I promise its fun if you've got a bit of time on your hands, and you're not overly stressed ;)

What you need

Pizza Base
500g plain flour
1 1/2 tsp sugar
2 tsp (or 1 sachet) instant dried yeast
3/4 tsp salt
300ml water
1 1/4 tbsp olive oil

Pizza Sauce
(This doesn't take long to make, and it tastes SO much better than Tomato Puree)! Its also really good to throw over some pasta or tortellini if you're feeling a bit lazy one night but fancy something yummy to munch on.
1 Onion
2 or 3 cloves of garlic
1 1/2 tsp basil
3/4 tsp salt
1 1/4 tbsp dried oregano
1/2 tsp black pepper 
400ml tinned chopped tomatoes
2 3/4 tbsp olive oil

Method

Sift the flour, add olive oil and salt and then add yeast and water. KNEAD WELL with flour covered hands. Pop the dough in a bowl covered with cling film or a tea towel, and leave it somewhere warm for about 2 hours. Knead again and roll it out and leave space around the perimeter and curl it up a little. We discovered that rolling is the best way to get the dough flatter, and we thought we'd best leave the spinning to the professionals. Damn. 

Chop the onions and garlic and fry them in olive oil until soft. Then, add the spices and chopped tomatoes. Let them simmer for up to half an hour to reduce the water and thicken, then, with a hand blender, give it a good blitz! Leave to cool for a while, and then you can spread it over your previously rolled dough. 

The fun bit: Add your toppings! Don't go too crazy though because they'll make your pizza soggy. To give you an idea of toppings, we added: Mozzarella, Cheddar, Chorizo, Bell Peppers, Red Onion and Spinach. Oh, and then Parmesan to finish. Okay, maybe we did go a bit crazy, but it still tasted good! 

Whack it in your preheated oven (highest heat possible) and it should be done between 10-15 minutes.
